The Adelaide Hills is renowned for many of Australia’s finest white varietals. Harvesting in the cool mornings ensures we extract the most vibrant fruit.
These Pinot Gris grapes were hand-picked and then crushed and pressed with free run and pressings fractions kept separate.
Most parcels were fermented in stainless steel tanks to maintain the fresh lively characters and varietal definition. A small parcel was fermented in 1 and 2 year old French barriques to add complexity and texture. All parcels were kept separate until final blending of this extremely limited wine.
It is straw green in colour with a refreshing palate. Lifted pear and spice aromas & flavours combine with bright acidity and textural creaminess.
